Hi everyone! In honor of World Pistachio Day, I have a new recipe to share with all of you. Today we are making Pistachio Cardamom Bread! This recipe will be your new go-to sweet bread recipe. It’s spicy, sweet and the pistachios add a nice flavor and texture. And did you know that pistachios provide THREE grams of fiber preserving, which is more than some types of whole fruit? Amazing! It has so much fiber, that you would have to eat two plums to get the same amount of fiber found in just one serving of pistachios. 1 cup (2 sticks) butter
2 cups sugar
2 teaspoons vanilla
4 large eggs
1 cup buttermilk
2 cups flour
2 1/2 teaspoons ground cardamom
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup chopped American Pistachio Growers brand pistachios (or more to taste)
Preheat oven 320 degrees
1. Cream butter and sugar until light and fluffy.
2. Add eggs one at a time until smooth.
3. Add vanilla and buttermilk.
4. Add dry ingredients and nuts until just blended.
5. Pour batter into a well-buttered (or butter sprayed) loaf pan.
6. Bake for 55 minutes or until a toothpick come out clean.
It’s that easy! And this bread is SO GOOD. I’m surprised it lasted long enough to take the picture! You can have it hot with butter on top or just by itself. It is so moist! It is perfect for a little breakfast treat to eat while celebrating pistachios! Just add coffee. ;)
