World Pistachio Day: Pistachio Cardamom Bread



Hi everyone! In honor of World Pistachio Day, I have a new recipe to share with all of you. Today we are making Pistachio Cardamom Bread! This recipe will be your new go-to sweet bread recipe. It’s spicy, sweet and the pistachios add a nice flavor and texture. And did you know that pistachios provide THREE grams of fiber preserving, which is more than some types of whole fruit? Amazing! It has so much fiber, that you would have to eat two plums to get the same amount of fiber found in just one serving of pistachios. So go ahead and enjoy your pistachios on World Pistachio Day and every day! Try this recipe, or search my blog for the other delicious pistachio recipes I’ve created.

Ingredients:
1 cup (2 sticks) butter
2 cups sugar
2 teaspoons vanilla
4 large eggs
1 cup buttermilk
2 cups flour
2 1/2 teaspoons ground cardamom
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup chopped American Pistachio Growers brand pistachios (or more to taste)

Directions:
Preheat oven 320 degrees

1.      Cream butter and sugar until light and fluffy.
2.    Add eggs one at a time until smooth.  
3.    Add vanilla and buttermilk.  
4.    Add dry ingredients and nuts until just blended.  
5.    Pour batter into a well-buttered (or butter sprayed) loaf pan.  
6.    Bake for 55 minutes or until a toothpick come out clean.  


It’s that easy! And this bread is SO GOOD. I’m surprised it lasted long enough to take the picture! You can have it hot with butter on top or just by itself. It is so moist! It is perfect for a little breakfast treat to eat while celebrating pistachios! Just add coffee. ;)

Nutty Muddy Buddies: Pistachio and Chocolate Muddy Buddies

Hi everyone! Who is excited for the Oscars?! I know SO many of you are! You may be thinking, “I have my predictions…I have my TV…but I’m missing my Nutty Muddy Buddies!” No? You weren’t? Well, you should be! I’ve created a Pistachio Muddy Buddy recipe that can get pretty addicting! I’ve named it Nutty Muddy Buddies. It’s the perfect snack to munch on while you watch the Oscars.

Nutty Muddy Buddies
6 cups Rice Chex cereal
¼ cup butter, melted
½ cup sweetened condensed milk
1 cup vanilla flavored candy chips (the same used in our Cherry Bark) or chocolate chips
1 (3.4 oz) pistachio pudding mix
1 and ½ cup powdered sugar
1-2 cups mini chocolate chips
¾ cup American Pistachio Growers brand pistachios

Directions:
The key is to do everything FAST!
1.      Place cereal in a large bowl and set aside.
2.    In a small saucepan, combine the butter, sweetened condensed milk, and vanilla or chocolate chips, until the chips have just melted.
3.    Mix your pistachio pudding mix into the hot mixture until just incorporated.
4.    Remove from heat and pour over the cereal. Mix as quickly as possible with a spoon and hands as needed.
5.    Add in the mini chocolate chips and pistachios, mix well.
6.    Toss quickly with powdered sugar.
7.    Let cool and enjoy!


It’s that easy! I must warn you, please look at your box of pistachio pudding mix and be aware of any allergies you are avoiding. The box I used had almonds in it. Also, there is a lot of sugar in this and, like I said, it is addicting! May not be suitable to swimsuit prep but hey…live a little! ;) It’s the Oscars!

January Recap

Hi everyone!

I'm realizing I don't quite blog as often as I used to. So, to make up for it, I'd like to give you a recap of all the things I have done in the month of January!

On January 1st, Hannah and I visited Sutter Delta to deliver gifts to Miss Contra Costa County's New Year Baby.

I also launched a giveaway for Miss Contra Costa County fans! I'm hoping to do a giveaway every month. The next one starts today, February 9th!


My old fitness blog is up and running! Sometimes I wonder if blogging is beneficial to anyone else but me. But, while I would love to see my words help others, blogging keeps me on top of life and get my thoughts in order. I'm happy to bring my fitness blog back for motivation! Follow me here!



In addition to pageantry, I flew out to Idaho to visit my boyfriend and his family. It was snowing during most of my trip!



I made a few recipes, which I'm sure you see down below! I have an extra one here that was posted on the Miss California blog!



I was a part of not one but TWO Children's Hospital Oakland fundraisers this month! 


And I recognized FIVE wonderful Miss CA volunteers that I love so dearly! Each one has touched my life in immeasurable ways. Each week, I try to recognize a volunteer on Thank A Volunteer Thursday! Check it out on my Instagram here!



I was also able to visit two pageants this month, Miss Santa Clara and Miss Sacramento County!

I feel like this year is already flying by! Here we are almost halfway through February. I'm excited for the upcoming events, but I wish time would slow down!
