Get Ticked Off at Lyme Disease! Clothing Line

Hi everyone!


I'm proud (and nervous) to announce that I've teamed up with Cafe Press to sell Lyme disease awareness clothing here! If you didn't know already, I have also created a CLAPS program for teachers and children to teach what Lyme disease is and how to prevent it.

One lesson I teach in my program is to wear long-sleeved, light colored shirts as well as light colored pants tucked into your socks. In addition, I also teach children to wear caps or hats on their heads to prevent a tick from latching onto their scalps. Hiking appropriate clothing is available in my shop, as well as fashion items. The fashion items are all items that are BLACK, while hiking appropriate items are those that are WHITE and LONG (i.e. no tank tops, short-sleeves, etc.). Of course, it is up to the consumer to use the clothing properly. :) Personally, I enjoy wearing tank tops while I hike but it isn't the most tick-safe method, so I made other choices available.

I encourage you to check it out and possibly consider purchasing an item! All profits after costs are donated to the California Lyme Disease Association (lymedisease.org).

St. Patrick's Day Pistachio Pudding

Hi everyone! If you've been following the Miss California local titleholders on Instagram, we are participating in a #MarchPhotoChallenge! Today's challenge topic is to show you what is in my fridge...and I'll tell you! Surprisingly, the leftovers of this recipe are in my fridge! I say surprisingly because this particular recipe is so yummy! Perfect for a green themed party.



Okay, my post might look different than all of the other clean eating posts that are probably filling up your newsfeed. I know I post a lot of dessert recipes, but I promise I eat healthy! All in moderation, right? :) 

I love this recipe because it has one of my favorite fruits in it...pineapples! And of course, my favorite nut, the pistachio nut from American Pistachio Growers! 

Homemade Pistachio Fruit Pudding
3/4 cup sugar
1/4 cup cornstarch
2 1/2 cup milk
1/2 teaspoon salt
3 egg yolks slightly beaten
1 tablespoon butter
1 teaspoon vanilla
green food coloring (to desired color)
1 20 oz. can pineapple chunks
1/4 cup craisins
1/2 cup chopped pistachios
whipping cream
sugar (to taste for whipping cream)

Directions:
1.      In a large saucepan, cook sugar, milk, cornstarch, and salt.
2.    When it thickens, add a tablespoon of the mixture to the egg yolks. Stir well.
3.    Keep adding a tablespoon of mixture to the yolks a little at a time, mixing after each addition, until the yolks are very warm.
4.    Mix the egg mixture back into the saucepan and heat until thick.
5.    Cook until thick.  
6.    Take off stove and mix in butter, vanilla and food coloring (until you get the color green that you want).
7.    Put in the refrigerator for at least 4 hours to cool.
8.    Whip the cream, adding sugar to taste.
9.    Drain pineapple.

10. Add pineapple, craisins and pistachios to pudding. Top with whipped cream and enjoy!

Love being YOU!

Hi everyone! This may be a little bit of a cheesy post...but I was at the gym today and I had a revelation.

I love being me!

Before you say, "WOW! She is full of herself."

You should LOVE being YOU!

Think about it...no one else in the world is you. You have your own opinions, experiences, goals, aspirations. Whether you've struggled in your past or not, you have complete control over your own happiness and your own future. You can do whatever you put your mind to! Every day is a chance to turn over a new leaf and follow YOUR dream.

What would you do if you were unafraid?

What is something that you've always wanted to do but you never thought you could?

What is holding you back today from achieving your dream tomorrow?

Make a change! Live life to the fullest! Take a chance! Eat your veggies. :)

Seize the day, everyone! Do it!

February Recap

Hi everyone! Happy March! I am here to tell you about February! If you want to follow me in real time, go ahead and like Miss Contra Costa County on Facebook or follow me on Instagram.

This month I...


Went to my High School's cheerleading reunion, where I was the only 2010 representative! I always loved being a cheerleader. I started cheering in 9th grade and went on to win Most Improved, Most Spirited, and become Varsity cheer captain by the time I graduated! I was chosen to be one of 10 AAUW Senior Scholars from AHS and I absolutely loved being so involved in high school. Check out my letterman jacket!




Throughout the month I also had the opportunity to read to over 100 children with partnership with the Contra Costa County Library as well as a local elementary school.



I was featured on the Miss California blog this month, with my yummy Pistachio Vinaigrette recipe! I also posted a Pistachio Cardamom Bread recipe on my blog in honor of #WorldPistachioDay!



Hannah (Miss Contra Costa County's OT) and I went to Children's Hospital Oakland's Family House this month to deliver Valentine's Day goodies! I also packaged up Valentine's Day treat bags for the families that are staying there and sent them over just in time for Valentine's Day.


I love getting personalized thank-you notes from the Family House like this one! I'm usually the one sending them, so it's always a nice surprise to receive them!



I was interviewed on the TV show The Martina Talk Show and even had the opportunity to be on a panel to discuss fashion!


My fitness blog turned TWO years old!





I attended FOUR pageants...


I held one successful giveaway...




Recognized three (technically four, but I included Caryn in last month's recap!) volunteers!


I spoke with one rotary club about my platform, CMN, and MAO. Toastmasters is paying off! My speech was better than I could have ever expected! I love watching my growth through this organization.

And finally,

I participated in one Motivational Monday!

Phew! What did your February look like? My March has already been jam packed with appearances...I can't wait to see what else I can accomplish this month!
